Eggplant recipes I decided to add mushrooms to my tomato sauce to add more flavor. The mushrooms also add a meatiness which makes this a delicious vegetarian main dish. The end result was this deliciously cheesy recipe. Perfect as a meatless meal served with crusty bread and a crisp, green salad. Ingredients and Substitutions Eggplant/aubergine. Mozzarella cheese. Parmesan cheese. I prefer using Parmigiana Reggiano but Pecorino Romano can be used instead....

Updated April 28, 2011 We made freezer jam and it was really easy. We started with the Plum Cinnamon Jam. Pitting the plums was the hardest part, but Josh helped, so it didn’t take long. The cinnamon gave the plums a sweet finishing touch. I hated seeing how much sugar was involved, but it made a lot of jam and you only use a little at a time. Next, we made Plum Raspberry Jam....

As a child, eating a candy apple was the ultimate delight. I never felt guilty because well, it’s an apple! Yes, it has tons of sugar around it but who cares? It’s fruit! I would always crack the candy coating on the table because it was just too hard to bite through and I loved how it always made me feel so jolly when I ate it. And I now see that same joy on my kids’ faces when they eat them....
