Pumpkin Apple Muffins With Cinnamon Streusel

Updated April 28, 2011 The recipe has applesauce and pumpkin so you know they are going to be super moist. I used half whole wheat and half all purpose flour so they are nice and hearty. I also love the diced apples that are inside, they too keep the muffins moist and bursting with fall flavor. And the finishing touch is a cinnamon streusel that brings everything together!! I made 12 regular size muffins and 32 mini muffins…this recipe makes a ton, but I promise you they won’t go to waste....

Quinoa Salad With Sweet Potatoes Kale Dried Cranberries

Updated March 26, 2019 Last week we were on a sugar high from all of the Halloween candy recipes I posted. We are all sugared out. Don’t worry, it won’t last long, but today we are sharing a healthy recipe. I blame Josh for my latest obsession-sweet potatoes and kale. Ever since he created that Sweet Potato Kale Pizza, I have been craving them like mad. I could easily eat that pizza every night, but to mix things up I created a Quinoa Salad with Roasted Sweet Potatoes, Kale, Dried Cranberries, & Red Onion....

Real Deal Xinjiang Cumin Lamb

Cumin lamb (孜然羊肉, Zi Ran Yang Rou), originally from Xinjiang cuisine, is such a popular dish that I thought was a Beijing dish growing up. It is just one of those dishes you see everywhere, no matter whether in a small diner or high school cafeteria. When visiting China for the first time, especially the northern or western part of the country, you might be surprised at how popular lamb is....

Scallion Beef Stir Fry

This scallion beef recipe is slightly adapted from scallion lamb stir-fry (葱爆羊肉, cong bao yang rou), a classic northern Chinese dish. You probably won’t find scallion beef in a Chinese restaurant, as beef is not a staple in most of China. But since beef is a more available protein in the US, I wanted to share this classic recipe with you using beef. Scallion beef is made with sliced beef and Chinese scallions in a savory brown sauce....

September 2016 Grocery Store Finds

Ever since I was a lil’ chickpea I’ve LOVED grocery stores. Like, imagine a 12-year-old getting genuinely mad at her mother for going food shopping without her, and that was me (p.s. Mother, if you’re reading this I know you went to Costco last week without me). Getting my license only fueled my passion. Then not only could I go find all the new yummy eats, but I didn’t have to ask for a ride....

Slow Braised Pork Ragu With Roasted Garlic Gnocchi

I wanted to use Donna’s idea but wanted to give the recipe my own spin, so for the original, please get your hands on a copy of the latest Donna Hay or download it onto your iPad. Smashed Chickpea Avocado And Pesto Salad

Updated March 26, 2019 Last week, I made Crispy Gnocchi with Pesto for dinner. Caleb loved it and wanted to eat the leftovers for breakfast. I am happy he loved what I made for dinner, but since he ate the leftovers in the morning, I didn’t have anything for us to eat for lunch. He is only three and already an eating machine.
