Even Khaled can agree that it is one of the keys to foodie success (insert key emoji here). Has there ever been anything more magical? When we think brunch, we think beautifully decorated stacks of pancakes and waffles, bubbly drinks, savory breakfast casseroles, and ooey-gooey breads. Are you drooling yet? I am. By no means do you have to be follow a vegan diet to enjoy these recipes. Believe me, they’re all certifiably delicious to carnivores and herbies alike. The best part is that a lot of these items can be made ahead so you don’t have to do anything but eat and socialize in the morning.
What should I serve a vegan for brunch?
Ahh, the magical question. You can make vegan versions of pretty much everything these days, but my favorite vegan brunch items include pancakes, quick breads, muffins, oatmeal bars, and smoothies. Swap out the eggs for flax eggs or egg substitute in a recipe that calls for eggs and you’re golden! See a pancake recipe with butter? Try melted coconut oil instead. Savory vegan brunch items are more tough, but you can do magical things with chickpea flour to make vegan egg bakes, brunch casseroles, and quiches.
