Ingredients and Substitutions
Rotisserie chicken. I always turn to a rotisserie chicken when I make a chicken pot pie. Half of the work has been done for me! You can use cooked chicken breast meat too. Bechamel sauce. Substitute with a can of cream of mushroom soup or cream of chicken soup. Vegetables: I used onion, carrot, celery and garlic. Mushrooms, broccoli, potatoes, peas, frozen mixed vegetables etc. can all be added. Spices: I used dried thyme, salt and black pepper. Oregano, rosemary, sage, parsley, garlic powder can all be added. Puff pastry. Use any pie crust of your choice. Biscuit dough is also a great option. Egg.

Can I make this ahead?
Yes! This pot pie is a great prep-ahead dish. Assemble the pie all the way up to cooking then cover with foil or plastic wrap and store in the fridge overnight before cooking. Any leftovers can be kept in an airtight container in the refrigerator for up to 3 days.
