 Ingredients

Fresh corn on the cob Vegan butter or olive oil  Salt and pepper, to taste Chaat masala Chili powder Aluminum foil Optional toppings: chopped fresh herbs (cilantro, parsley, etc.)

Instruction 

I bought the fresh corn from Costco. It came with eight cobs. I made 4 using foil and the remaining air-fried directly.  In a small bowl combine all the spices and salt together. Carefully brush softened, melted butter over each cob, then sprinkle the spice mixture on top of it. Wrap each cob into a square of aluminum foil, sealing all the sides (to prevent steam from escaping).  Place corn in your air fryer basket ( mine cosori AF) in a single layer and cook at 400°F for 10-12 minutes.  When done, remove from air fryer and let cool for 3-4 minutes. Unwrap and serve. Carefully remove the corn on the cob from the foil, transferring it to a serving platter. Optional toppings: If desired, sprinkle the cooked corn kernels with chopped fresh herbs (such as cilantro or parsley) for an added touch of flavor.

My tips 

Use fresh, in-season corn for the best taste and texture. If you want to add a unique twist to your corn, consider experimenting with additional flavors in the compound butter. Some ideas include adding lemon zest, chili powder, or your favorite herbs. Keep an eye on the corn during cooking to ensure it doesn’t overcook or burn. Cooking times may vary slightly depending on the size and freshness of the corn, as well as the temperature of the air fryer. Keep the corn covered with the aluminum foil for 5 minutes after cooking. This will help the steam to keep the corn moist and juicy. Cooking corn in foil is the best way to achieve the perfect juicy and tender kernels. If you’re looking for a roasted corn flavor, simply apply some oil to the cob before air frying it. Adjust the cooking time accordingly if you use frozen corn instead of fresh corn. 

Storage

Any leftovers can be stored in an airtight container for up to two days. Reheat in the air fryer or oven before serving. Enjoy!
