Don’t skip the par-boiling. This might seem like an unnecessary step but it’s the key to getting a light, fluffy interior with a perfectly crisp and golden exterior. I’ve tested this recipe without the parboiling but the end result just wasn’t as good. Still delicious (I mean, it’s potatoes after all) but nowhere near as tasty. Be generous with the seasoning. Potatoes can handle a lot of seasoning so don’t be shy. I kept it simple here by only using salt and pepper but using spices like cajun seasoning, smoked paprika, garlic powder or onion powder and dried herbs like thyme, sage, rosemary or oregano will add more flavor. Just remember that spices can burn so watch the potatoes while they’re air frying. Garnish the potatoes with fresh herbs like parsley or chives before serving, if preferred. Serve immediately. The longer roast potatoes sit, the softer the crust will become. Serve the hot and fresh out of the air fryer for the best flavor and texture.
Can I make this ahead?
You can par-boil the potatoes and let them dry in the fridge overnight. Leftover potatoes can be kept in an airtight container in the fridge for up to 4 days and re-heated in the air fryer.
