Salmon. I used skin-on salmon fillets but feel free to use skinless salmon. This works well with other fish as well. Cod, in particular, is delicious prepared this way. Mirin. Sake or sherry can be substituted. Rice vinegar. Miso paste. Honey. Brown sugar can be used. Soy sauce. Use tamari or coconut aminos for a gluten free substitute. Fresh garlic.

How long to bake salmon
Salmon is cooked when the fish flakes apart easily with a fork. You can also press on the salmon with your finger and if the flesh flakes easily, it’s cooked. I usually bake salmon fillets for 10-12 minutes for a cooked, yet incredibly juicy doneness. You can let it go for 15 minutes if you prefer, however the salmon won’t be as moist.
