Ingredients
Sweet potatoes. Oil. I used extra-virgin olive oil but avocado oil or macadamia oil are also good options. Salt. I kept this recipe simple but you can add any spices of your choice. Black pepper, garlic powder, ground cumin, smoked paprika and cinnamon are all delicious with sweet potatoes. Butter. I always use salted butter as that is what I have on hand most often. Feel free to use unsalted butter. To keep this recipe vegan, use vegan butter as substitute. Honey. Maple syrup is a good substitute.

Can I make this ahead?
The sweet potatoes can be baked up to 2 days ahead and reheated in a hot oven. The whipped honey butter can be made up to a few weeks in advance and kept covered in the fridge. I often pop a few into the oven, wrapped in foil, directly on the oven racks while I’m making a roast chicken or while something else is baking to maximize the oven being on already and to make meals throughout the week a little easier.
