Updated March 26, 2019 I am really sick of winter. It has been cold and dreary for too long. I know it is only January and I live in Utah, so I have a few months to go:(  To help lift my spirits, I made this Black Bean, Avocado, and Mango Salad with Cilantro and Lime. This salad reminds me of summer. I love all of the bright colors and fresh ingredients. I also like how easy it is to make. I used canned black beans, chopped up a tomato and cilantro, diced a mango, avocado, red onion, and sliced a lime. I put all of the toppings on a bed of romaine lettuce. The salad really doesn’t need a dressing-the juicy mango, creamy avocado chunks, and cilantro add plenty of flavor. I just squeezed fresh lime juice over the top for my dressing. If you are a dressing lover and need a little something extra, try Josh’s mango salsa. The salsa goes great with this salad and makes a very healthy dressing. If you are experiencing the winter blues lime me, try this salad. It will take you to a special summer paradise-at least for one meal.
