Mashed potatoes: Use any recipe you love but I used my garlic Parmesan mashed potato recipe for this. Cheese: I used Raclette which is a good melting cheese. Fontina, Mozzarella, Cheddar and Havarti are all good options. Panko breadcrumbs. Garlic. Olive oil. Salt and pepper.

Can I make this ahead?
The casserole can be fully prepped, ready to be baked, up to a day in advance. Assemble the casserole then cover with foil and refrigerate for up to 24 hours. Bake for 10-15 minutes longer if you’re baking straight from the fridge.
