Ingredients Needed
Courgette/zucchini. Flour. I used all purpose flour/plain flour. You could use self-rising flour, just remember to omit the baking powder. Salt and black pepper. Milk. I used whole milk but use any plant/nut milk of your choice. Egg. Oil. I used olive oil but melted butter can be substituted. Cheese. A good strong cheese like mature/aged cheddar, gruyere, etc. Crumbled feta cheese would also be delicious. Optional: Fresh herbs like mint, parsley, dill or basil are all delicious with courgettes and can be added to the batter. As can finely chopped spring onions/scallions.

Fritters are a fantastic make-ahead dish. Leftovers can be kept in an airtight container in the refrigerator for up to 4 days and reheated in the microwave oven or air fryer until hot throughout.
