An easy pasta recipe such as this one is a great option for dinner and sure to please anyone at the end of a long day at work. I added a few red pepper flakes to suit my taste. A little bit of fresh garlic, avocados, fresh herbs, nutritional yeast as the main ingredients and 15 minutes of cooking time is all it took to prepare this vegan avocado pasta. I love using avocados because they are naturally creamy with heart-healthy fats and make an easy option for creamy pasta without any dairy or nut-based ingredients. You can change up the herbs depending on what you have available. Even picky eaters will love this one! It has a delicious lemony flavor, and if you add fresh basil it tastes like creamy pesto pasta! Ingredients note
Avocados: Use ripe ones that are easier to mash than firm avocados. Pasta: I used ‘Gemelli’ pasta for this recipe, but you could use different kinds of pasta too such as penne or fusilli.Plant-based milk: Almond milk or oat milk work equally well to act as a milky base for avocados.Lemon juice: Lemon or lime juice helps in balancing taste as well as keeping avocados from browning.Olive Oil: Extra virgin olive oil is the best option compared to all other options as it brings out the best from herbs such as garlic, and fresh basil.Seasoning: Cayenne pepper, salt, ground black pepper for seasoning.Nutritional yeast: This helps in bringing the cheesy flavor and creaminess too. And vegan substitute for parmesan cheese.Basil leaves: Use fresh basil leaves instead of packaged basil flakes or dried leaves. The flavors from fresh basil leaves are a big part of the experience.Garlic cloves: Use raw garlic cloves or garlic powder.
How to make this recipe
Cook your pasta according to the package instructions. Just before draining the pasta, reserve ¼ cup of the pasta water and set it aside. Prepare avocado pasta sauce: Put everything listed in the ingredients list into the blender or food processor. Blend to a super smooth and creamy consistency. Mix avocado sauce with your pasta, add the pasta water gradually to get the right consistency. Mix well and top with cherry tomatoes and chilli flakes (if you desire), and enjoy!
Tips
When you chop the avocados, place them in a bowl with lemon juice or vinegar. This will help prevent browning. Mix in some nutritional yeast for an extra cheesy flavor! You can use frozen corn for this recipe to bring in a sweet note but be sure to thaw it out first!Use any type of pasta like penne, spaghetti, fusilli. Gluten-free pasta is also a great fit for this recipe.You can also top with roasted cherry tomatoes and seeds.
