Ingredients and Substitutions
Carrots. I used regular large carrots that I peeled and chopped but this recipe can be made with baby carrots too. Extra-virgin olive oil. Avocado oil or canola oil are good alternatives. Salt and black pepper. I chose to keep this recipe super simple so it goes with a variety of main dishes but feel free to play around with seasonings. Spices like cumin, paprika, garlic powder, cinnamon, coriander and curry powder are delicious on carrots. Herbs like parsley, thyme and oregano will also be tasty. A drizzle of honey or maple syrup will also be delicious and give you more of a caramelized, roasted finish. Toss with fresh herbs like chives or parsley and parmesan cheese for a more elevated version.

Can I make this ahead?
Air fryer carrots can be prepared ahead and leftovers can be kept in an airtight container in the fridge for up to 4 days. Reheat in the air fryer or microwave oven before serving.
