This dish combines the natural sweetness of carrots with the earthy flavors of potatoes and is all brought together with aromatic herbs and spices in an air fryer. I like Indian side dishes like beans stir fry and beets stir fry with my main dishes. With these recipes, I was inspired to try an air-frying version of roasted carrots and potatoes. This differs from other recipes because I added Indian herbs and spices. The result was an easy side dish you can prepare with minimal effort and one you can experiment with different seasonings that suit your main course meal. Ingredients 

Carrots  Potatoes Herbs and spices Olive oil

Instructions

Peel and chop the carrots and potatoes uniformly into bite-size pieces.  Pat them dry and then place them in a large bowl. Then, drizzle with olive oil. Place them in an air fryer basket and Cook at 380°F for 15 minutes, shaking the basket halfway through to ensure even browning.  Add the herbs and spices, mix well, and then cook for 5-8 minutes or until the vegetables are cooked through and golden brown.  Enjoy the simple recipe of air fryer carrots and potatoes!

Subsititute 

If you don’t have carrots, try using baby carrots or sweet potatoes in this recipe for extra sweetness.  Try adding bell peppers along with the starchy vegetables to add extra color and flavor. You can also substitute other herbs and spices according to your taste.  Parsley, oregano, thyme, or dill are all great choices!  Substitute kasuri methi with other herbs like oregano or thyme for a different flavor.  If you don’t have extra virgin olive oil, substitute with avocado or canola oil. Both will work just as well!
