Okay so this is more of me sharing an idea to inspire you versus a blow-your-mind recipe, ya dig? We all need those sometimes. Healthy oatmeal recipes are kind of my thing. You know I love Chocolate Peanut Butter Overnight Oats with yogurt and High Protein Carrot Cake Overnight Oats as much as the next person but today’s combo is at the tippy top of the cravings list. Instead of mixing Greek yogurt into oatmeal, recently I love enjoying it on top paired with fabulous sweet, salty, and crunchy toppings. Texture galore or it didn’t happen! This recipe is such a fun way to jazz up boring cooked oatmeal sitting in your fridge frowning at you. It also makes it ten times more filling!
Ingredients
Old fashioned oats: We’re getting back to basics and cooking rolled oats in a pot since it’s quick. You could also use leftover overnight steel cut oatmeal! Milk: Unsweetened vanilla almond milk is my favorite for flavor and creaminess, but use any milk you love or even water. Salt: So key for flavor. Yogurt: I love lightly sweetened vanilla Greek yogurt here (I look for 7g or less of added sugar). You could also use plain or stir in some honey. Nonfat or full fat both work. Save the regular yogurt for my frozen yogurt bars! Fresh strawberries: The ideal sweet pop of juiciness to go with our yogurt oats. Dark chocolate: What really ups the irresistibility factor. I like 72% for that nice dark chocolate flavor. You could also use a chopped dark chocolate bar but hey, these are supremely easy! Peanut butter: A delish creamy topping that also helps with satiety thanks to the healthy fats.
Substitutions and dietary swaps
As a dietitian, I’m pumped that these yogurt oats have almost 17g protein and 8g of fiber, not to mention plenty of healthy fats and antioxidant. Hello, healthy!
Nut free: Use oat milk and sunflower seed butter. Dairy free: Use your favorite dairy-free yogurt. Fruit: I’m partial to strawberries here because they go so well with the peanut butter and chocolate, but banana or blueberries would also be delish. Low sugar: Use unsweetened yogurt and the darkest chocolate you enjoy! High protein: I’d argue this bowl is already high protein, but you could always stir in a scoop of protein powder to the oats.

How to eat it!
Do we eat this warm like oatmeal or cold like overnight oats, you ask? It’s the best of both worlds, eating warm oats with cold yogurt, trust me. I promise it’s delish! You could also eat the whole thing cold with leftover oats from the fridge if you wish. I put the hot oats into a bowl, add a little chocolate for melty action, then do yogurt, strawberries and peanut butter. Divine, I tell you. If you want to make these ahead, you totally can! Just wait until oatmeal is cooled, then portion into containers with yogurt and topping. Plan to eat them cold, since warm yogurt is as weird as it sounds, LOL. Dig in, pals!
