Ingredients Needed
Eggplant/aubergine. Extra virgin olive oil. Fresh garlic. Chilli flakes. Lemon juice. Dried oregano. Feta cheese. Goat’s cheese or Parmesan can be substituted. Cucumber. Other vegetables like cherry tomatoes, red bell pepper and Kalamata olives can all be added to this salad. Salad greens. I used a mixture of baby butter lettuce, fresh basil and arugula/rocket.
How to make eggplant salad
Can I make this in advance?
The eggplant can be grilled and marinated for up to a week in advance. Store in the fridge in an airtight container until ready to serve. Assemble the salad an hour in advance and add the dressing right before serving.
What else can I add to this salad?
Tomatoes. Avocado. Red onion. Grilled/roasted red peppers. Grilled zucchini. Goat’s cheese. Parmesan cheese.
