I am sometimes more excited for leftover turkey than the actual turkey on the day. There’s just so much you can do with turkey leftovers and I anticipate the day after Thanksgiving/Christmas for months knowing I’m going to be able to continue the feast. Yay for Turkey Day! I usually revert to the good old leftovers sandwich the day after but this year I thought of something lighter, a little healthier but no less delicious. Because let’s be honest, we all need to be eased into post-holiday eating gently. I can’t go from chocolate, roasts and treats galore to salads and water. Come now. This wrap is the perfect bridge between indulgent festive feasting and a much healthier, lighter you. You could of course go completely low-carb and cut out the wrap all together but we’re crossing a bridge here people. Let me have this one. The Caesar dressing is a much healthier alternative to the oil-heavy version you’re used to and is 100% inspired by Jamie Oliver’s Caesar dressing. It is made with yoghurt (use any plain yoghurt you want here), anchovies (duh!), Parmesan (double duh!), garlic, Worcestershire sauce and lemon. It is so moreish. And actually, even a little better than the classic in my opinion. I bulked my wrap out with lettuce, cucumber and avocado to add some green goodness but feel free to use any vegetables you wish here. Even a little bacon wouldn’t go amiss. The best part though is the fact that this wrap will take you all of 10 minutes to put together from start to finish which means you can get back to doing as little as possible post-feast day. It’s a win-win all around!
How do you make a perfect wrap?
Start with good quality, large flour wraps. You don’t want all your filling to spill out of the rolled wrap so make sure your wraps/tortillas are nice and big. I like to give them a quick toast in a hot pan to make them more pliable and they also taste better when they’ve been warmed. Layer on a generous layer of lettuce followed by the turkey mixed with healthy Caesar dressing then add crunchy cucumber and sliced avocado. Tuck in the sides then roll into a tight wrap. Slice in half and serve.
How do you make healthy Caesar dressing?
To lighten up Caesar dressing, I love Jamie Oliver’s idea of using plain yoghurt. You can use any plain yoghurt but I like the creaminess of Greek yoghurt here. Season the yoghurt with all the usual Caesar ingredients like anchovies, Parmesan, lemon and garlic then mix well and season to taste.
