I wasn’t planning on blogging about this melon salad, but I can’t get it out of my head. I am obsessed! It is SO good. The juicy melon is good alone, but after dressing it up with fresh mint, lime juice, and a pinch of sea salt-it is heavenly. There really aren’t words to describe it’s deliciousness. It is pure summer bliss in a matter of minutes. We used Israeli melon, but cantaloupe would be tasty as well. This melon salad with mint, lime, and sea salt is good anytime of the day too-breakfast, lunch, dinner, or a snack. I could eat it all day long. I am in love!
