These cookies are absolutely inspired by my love of the movie Elf, and Buddy the Elf’s love of sugar. They are over-the-top and fabulous, just like everything during the festive season should be.
Ingredients

Butter. White sugar. Brown sugar. Eggs. Vanilla extract. Flour. Baking powder. Baking soda. Salt. Chocolate chips/chocolate chunks.
For the marshmallow fluff (alternatively use store-bought marshmallow fluff)
Water. Sugar. Glucose. Egg whites. Cream of tartar. Vanilla extract.
For the cookie sandwiches
White chocolate. Desiccated coconut. Candy canes (optional).
How to make Christmas Cookie sandwiches
Can I make these in advance?
The cookie sandwiches can be made up to 4 days in advance and kept in an airtight container in the fridge. Allow to come to room temperature before serving.
What else can I fill the cookie sandwiches with?
Nutella, peanut butter, even marshmallows s’more-style will work.
