This oatmeal soup is vegan. Easy to customize with your favorite vegetables and spices. Oats, the main ingredient, create a creamy soup base and bring a slightly nutty flavor to the soup.

Ingredients

Rolled Oats Mixed Vegetables(frozen) -Go with your favorite vegetables like green beans, carrots, celery, sweet potato, potatoes, green peas, etc. Green onions Ginger and garlic Coconut milk Spices - Black pepper, red chili powder, cinnamon powder Tomatoes Bayleaf

Instructions

Place a pan over medium-high heat and add olive oil. Once hot, add in chopped green onions, ginger, and garlic. Saute until fragrant. Add chopped tomatoes and saute for a minute. Add rolled oats and saute for 1 minute.  Add mixed vegetables and spices of your choice. Mix well and let it cook for 2-3 minutes over medium heat. Add 4 cups of water or vegetable broth and bay leaf. Bring to a boil and let it simmer for 10-15 minutes until the vegetables are tender. Add coconut milk and let it simmer for another 5 minutes. Serve hot with a sprinkle of green onions or chili flakes on top. Enjoy the warm and comforting flavors of this oatmeal soup filled with vegetables. 

Variations

Steel-cut oats can be used instead of rolled oats. Be sure to soak them for a long time for consistency. For a heartier soup, you can add in some cooked or canned beans like chickpeas or black beans. Add two green chilies for a spicier kick. Add 1 tablespoon of tomato paste for a richer and thicker soup.

Tips

For a creamier texture, you can blend some or all of the soup before adding coconut milk. If you are adding vegetables, be sure to chop them into small pieces to get a uniform consistency.

Serving suggestion

This oatmeal soup can be enjoyed as a meal on its own, or you can pair it with some crusty bread or crackers for a more filling and satisfying meal.
