Ingredients
I like using a deboned ham (or gammon, depending on where you are based). Not only does it cook much faster but the carving is made so much easier when you don’t need to work around a bone. However, use any ham you can find (spiral ham works well here). I also prefer using a smoked, uncooked ham so that I can cook it myself. This results in the juiciest ham you will ever have. If you can only find cooked ham, make sure to preheat the oven so that the glaze caramelizes quickly and the ham doesn’t dry out in the oven.
Ham/Gammon. Fresh oranges. I have use Clementines and Satsumas too. Whole garlic bulb. Red onion. Thyme. Fresh herbs like rosemary and sage are good substitutions. Chicken stock. Brown sugar. Orange juice. Lemon juice. Salt.

Any leftovers can be kept in the fridge for up to 3 days in an airtight container. Leftover ham is fantastic in sandwiches, omelettes or pasta dishes.
