The flatbread is also topped with red onion slices, tart blackberries, fresh basil, peppery arugula, salty pistachios, and a drizzle of sweet and spicy hot honey. The flavors are exquisite and scream summer. You can serve the flatbread as an appetizer or enjoy as a light lunch or dinner. It tastes gourmet but is so simple to make. Ingredients
Flatbread– you can use two naan flatbreads or one large flatbread. Stonefire naan flatbreads are great! Olive oil– for brushing on the flatbread. Garlic– minced. Brie cheese– rind removed and thinly sliced Peaches– I don’t peel the peaches, but you can. Red onion– thinly sliced. Blackberries– for a pop of color! Fresh basil leaves– for garnish. Arugula– so fresh! Flaky sea salt– for sprinkling. Honey– for drizzling! You can use regular honey or hot honey. Pistachios– for a nutty crunch.
How to Make Peach Brie Flatbread
Preheat oven to 400 degrees. Place the flatbreads on a large baking sheet. Brush with olive oil and sprinkle with garlic. Top evenly with brie, sliced peaches, red onion, and blackberries.
Place in the oven and bake for 7 to 10 minutes or until cheese is melted and flatbread is light golden brown.
Remove from the oven and top with basil and arugula. Sprinkle with flaky sea salt and drizzle with hot honey. Sprinkle with pistachios, if desired. Cut the flatbread into pieces and serve immediately.
Variations
You can make pizza with the same toppings! Instead of drizzling with olive oil and adding fresh garlic, spread pesto on top of the flatbread. Use fresh mozzarella cheese instead of brie. You can leave off the blackberries or use blueberries instead. Add a drizzle of balsamic glaze. Omit the nuts or use chopped pecans or almonds instead of the pistachios. Add prosciutto for a salty, savory kick!
