Boil the potatoes and mash them well. Puff pastry sheets: You can find these in most grocery stores or online. Pay close attention to the ingredients, as you don’t want to end up with a non-vegan pastry sheet. Spices: I used a combination of chaat masala, amchur powder, turmeric powder, garam masala, and red chili powder. Feel free to modify them to suit your taste preference. Thaw the pastry sheets: Thaw the pastry sheet according to the package directions if using frozen pastry sheets. Alternatively, leave them in the refrigerator for 4 hours. Place a pan over medium heat and add a few teaspoon of oil. As the oil heats up, add grated ginger, frozen peas, and all the listed spices. Saute for 30 seconds. Add the salt and mashed potatoes and cook for 2-3 minutes, stirring frequently. Remove from heat and let it cool completely. Preheat the oven to 400 degrees F. Place the thawed puff pastry sheets onto a surface dusted with all-purpose flour. Top with samosa filling and spread it evenly on the pastry sheet. Roll the pastry sheet tightly, starting from one of the sides, to make them resemble a log. Secure the ends. Apply a little water at the edges and seal the ends. Wrap each log with parchment paper and store them in the refrigerator for 30 minutes. Remove the parchment paper and place each log onto a dusted surface. Use a sharp knife to cut the rolled logs into 1-inch thick pieces to create pinwheels. Place the samosa pinwheels onto a parchment-lined baking sheet or baking tray. Bake them in the preheated oven for 12-15 minutes or until they turn golden brown.

Air fryer method

Alternatively, prepare these samosa pinwheels in an air fryer by preheating them to 400 degrees F. Place the pinwheels in the air fryer basket in a single layer and cook for 8-9 minutes until they crisp up and turn golden brown.

Tips

Work with one puff pastry sheet at a time when rolling the samosa pinwheels.Add one chopped green chili if you prefer some heat in the pinwheels.If you want to make these samosa pinwheels ahead, freeze them before baking and bake them when ready to eat.Choose your desired herbs and spices according to your preferences. You can also add more or less depending on what you have available.Experiment with filling variations, such as spinach or even tofu.Thaw the puff sheet to room temperature before unfolding. This will make it easier for you to work with.To cut the log cleanly, always use a sharp knife. A dull blade will make the layers stick together, preventing the sheets from rising.To get the golden color spray little oil on top of the pinwheels before baking or air frying.Serve them hot with your favorite chutney. Tamarind chutney, Coriander chutney, or green chutney are some great options!
