It’s that time of year again. The time that I so wish I could be in the USA experiencing a proper Thanksgiving. I blame Friends for this. I grew up with that show and the Thanksgiving episodes are some of my favourites. Who can forget Joey wearing a turkey on his head or Chandler’s toe being chopped off or Ross’ “Moist maker”. These episodes gave me an idea of what Thanksgiving was and man, how I long for it. For us, Christmas is the closest we come. A day spent with family eating all of the food and pigging out on the leftovers the next day. It’s also the day that we make turkey because when else are we meant to? I always use my Gran’s turkey and stuffing recipe because to this day, I have not found a more delicious way of doing it. And even though I love Christmas day, the leftovers on Boxing day is what gets me excited. Turning the leftover turkey or gammon (ham) into something delectable is a challenge I set myself every year. On particularly lazy days, I shove a few slices of turkey and stuffing between two slices of bread and a call it a day but I’ve used the ham in everything from eggs benedict to pasta bakes and I treat the turkey the same way I would chicken. Quesidillas, salads, you name it, I make it. This year, my turkey leftovers will be turned into this club sandwich of dreams. An almighty leftover sandwich made incredible with the addition of crispy bacon, ripe tomatoes, crisp lettuce and a tangy, creamy jalapeno mayo. Yes please! I love a good BLT and the addition of turkey makes it all the better. That jalapeño mayo is the real kicker here though. It’s sharp tang is what you want to jazz up the (some would say) boring turkey and this along with the slices of fresh tomato is what adds juiciness to this sandwich.

How do you make a club sandwich?

Toast crushed wheat (or any bread of your choice) then layer with slices of cooked turkey, crispy bacon, fresh tomato and lettuce. Mix together chopped, pickled jalapeños, mayonnaise and a squeeze of fresh lemon and generously spread onto the toasted bread before sandwiching together and slicing.

How do you layer a club sandwich?

Start with toasted bread then slather on mayonnaise, followed by crispy lettuce. The lettuce will catch any juices from the tomatoes which should be placed on the lettuce followed by cooked poultry, crispy bacon and another slice of toast. Continue with one more layer then top with a mayo-slathered piece of toast to finish.
