This is better than using coconut milk from a carton due to its creamy nature.Spices: I used fresh curry powder. You can substitute with cumin, coriander, chili powder, turmeric, and garam masala for a flavorful kick.

Place a pan over medium heat. Once hot, add olive oil and heat until it starts to shimmer. Whip up this nutritious and delicious recipe to please even the toughest food critics! Add a hint of chili powder if you prefer a spicy sauce Add the canned coconut milk and air-fried crispy falafel. Bring to a simmer and cook for an additional 5- 8 minutes. Adjust seasoning with salt and pepper if needed. Garnish with fresh coriander leaves, if desired. Serve the vegan falafel curry over basmati rice or naan. Enjoy!
