Updated June 01, 2020 Fajitas are my favorite thing to order when we go out for Mexican, but we don’t get out much so I make them at home. And honestly, I kind of prefer my homemade vegetarian fajitas! They are SO good and I don’t end up eating a bucket of chips and salsa at home…ha! Why is it so hard to stop eating ALL of the chips and salsa before your meal comes? I have no self control. Anyways, moving onto these delicious FAJITAS!!! This vegetarian main dish is loaded with colorful, delicious vegetables, and the topping combinations seal the deal. I am all about the toppings. This is also a super cost-effective way to make a weeknight meal and you can have these veggie fajitas on the dinner table in under 30 minutes! Dinner WIN!
How Do you Cut Vegetables for Fajitas?
This recipe has red, green, and yellow bell peppers. I core the bell peppers, removing all seeds and the stem, and cut them into long, thin strips for fajitas. I cut the red onion in long strips as well. For the mushrooms, I like them sliced fairly thick so they are nice and hearty in the fajitas. You can cut up the veggies in advance, just keep them in a container in the fridge until you are ready to make the fajitas. Veggie fajitas are a great meal prep meal!
Fajita Seasoning
Of course, there are tons of pre-made seasoning mixes you can buy at the grocery store, but I like to make my own fajita seasoning with the spices I have at home! This lets you control the spice and flavoring…plus there are no weird added ingredients that I can’t pronounce. And it only takes a couple of minutes! I make Vegetarian Fajita seasoning mix with:
Chili powderCuminGarlic powderOnion powderSmoked paprikaCayenne pepper (just a pinch!)Salt and pepper
SO SIMPLE! You can also make the fajita seasoning in advance so it is ready to go! I told you this was a good meal prep meal!
How to Make Vegetarian Fajitas
Combine all the seasoning spices in a small bowl and set it to the side. We’ll come right back to that!Heat the oil in a large cast-iron skillet over medium-high heat. I like to use a cast-iron skillet because it chars the vegetables and gives them extra flavor. Put the peppers, onion, and mushroom in and give it a good toss. You want everything coated by oil so it cooks evenly and cleanly!Now add in the fajita seasoning we just mixed, stir everything to coat, and let it all cook for 5 minutes. Stay nearby and stir it frequently!Right at the end stir in the garlic and lime juice. Let that cool for just 2 minutes or so. You want the veggies slightly crisp but still tender on the inside!You can serve fajitas in flour tortillas or corn tortillas. Both are tasty!
