Zucchini and squash: I got mine from Costco, but you can also get them from your local grocery store or farmer’s market. Zucchini season lasts all the way to the late summer months. Italian seasoning: You can find this in any grocery store or make your own blend with the herbs you choose, along with garlic powder and onion powder. Olive oil: Use good quality extra-virgin olive oil for the best results. Black pepper: Freshly ground black pepper is always the best way to get fresh flavors, but you can also use pre-ground pepper.

Instructions

Preheat your air fryer to 400F (200C). Cut the zucchini and squash into ¼-inch thick cubes or slices. Its a crunchy and healthy side dish that adds a great deal of color to your table Zucchini and squash are both low in carbs, so it’s a great healthy option that won’t leave you feeling guilty. Plus, the Italian seasonings make this recipe even more flavorful. The air fryer cooks it quickly and evenly, resulting in a crunchy side dish that you’ll love! With simple ingredients and minimal cooking time, this easy recipe can be a great option as a meal replacement too. With a little bit of ranch dressing, the perfect side dish can turn into a standalone meal! Place them in a large bowl and add the olive oil, Italian seasonings, salt, and black pepper. Toss everything together to make sure it’s evenly coated. Transfer the zucchini and squash to the basket of the air fryer and cook for 10-15 minutes, shaking the basket at the halfway point.
